Our Family’s Favorite Turkey

This is our family’s favorite turkey recipe. You will need:

  • Turkey
  • 6 Whole Carrots
  • 16 Ounces Rondele Garlic and Herb Spread
  • 6 Leeks
  • 4 Oranges Quartered
  • Salt/Pepper

Directions

Using a rubber spatula or flat object, gently separate skin of turkey from body cavity. Be careful not to tear skin. Do this by inserting the spatula at the neck of the turkey and slowly guide spatula back and forth to lift the skin away from the meat. Wash hands well! Spread Rondele garlic and herb spread onto turkey under the skin. Make sure to get around entire turkey, even on the legs and thigh area. Use remaining spread on top of turkey and sprinkle with salt and pepper. Place oranges, two leeks, and two carrots in body of turkey. Place stuffing in the neck of the bird, if so desired. Take the oven bag and splash inside with a tiny bit of water. Then, put about one teaspoon of flour in the bag and shake. Create a “rack” inside of the bag by alternating a leek and a carrot. Place turkey on top. Seal bag and follow the cooking instructions according to the size of the turkey.

Perfect Roasted Chicken

Serve our perfect roasted chicken for supper and everyone will be asking for seconds. Prep time is 10 minutes and cooking time is one hour and 45 minutes. You’ll need the following ingredients:

  • 1-2 Tablespoon My Family’s Poultry Seasonings, Divided
  • 2 Tablespoons Butter, Softened
  • 1 Whole (3-4 lb.) Chicken
  • 2 Oranges, Cut and Quartered
  • 2 Ounces Crumbled Feta Cheese
  • 1 Medium Onion, Cut Into Wedges
  • 6 Leeks
  • 6 Carrots
  • 2 Tablespoon Olive Oil
  • 6 Ounces Spinach, Rinsed

Directions

Preheat oven to 375 degrees. Mix two teaspoons My Family’s Poultry Seasoning with butter. Rub three-quarters of the butter mixture under chicken skin (breasts and legs) and remaining mixture on the outside of chicken. Sprinkle one teaspoon My Family’s Poultry Seasoning over outside of chicken and stuff four orange halves, two leeks, two carrots, and onion wedges inside the chicken cavity. For best results, use a poultry bag. Follow cooking instructions from bag. Form a rack in the bottom on the bag by arranging a single layer of a leek, carrot, leek, carrot, or you can do the same with a roasting pan. When using a roasting pan, be sure to cover poultry when cooking. The leeks will flavor the meat and make a great pan gravy. It will also prevent the skin from sticking to the pan. Remove chicken or turkey from oven; let rest 10 minutes. OPTIONAL: Transfer vegetables to a large skillet. Add salt and pepper. Cook one to two minutes over low heat. Toss in spinach just before serving. Cook one to two minutes or until leaves wilt. Remove from heat; gently stir in feta and juice of one-half orange. Remove vegetables to a large platter. Carve chicken and serve over vegetables. Use an instant-read thermometer; this gives a far more accurate reading.
